Don't ever convince me that I need to double your homemade mac and cheese recipe because no one will ever be able to eat 3 big casserole dishes of mac and cheese...seriously no one...even if it is the most delicious stuff in the world!
I must admit I gave my try at The Lady's Mac and Cheese for the very first time this Thanksgiving. And yes, I am aware that the 'Lady's' in the title should be spelled ladies, but I was going for the effect of the recipe title in my title. Anyway, it says that the recipe will serve 6-8 so when I learned that there would be 10-12 at our dinner, I thought it necessary to double the recipe. Not a good idea, hence my note above.
Thankfully, I was invited over to my friend Jason's house, where all of the Denver orphans went to give thanks and to have some good eats. Being a vegetarian sure does make Thanksgiving a little awkward as you not only cannot eat majority of the dishes served, but everyone feels the need to question why you don't eat meat...
Q:How long have you been a vegetarian?
A: Since I was 12....so 16 years.
Q: What made you stop eating meat?
A: I just didn't like the taste of it. So when you don't like the taste of something, you don't eat it. I think it's a texture thing. And no, it is not an animal cruelty thing although I do find myself crying over the poor little piggies headed off to the market.
Q: Really, well what all do you eat?
A: Oh you know, a lot of things, just not meat.
Q: Well how do you get your protein?
A: Well I eat tofu, beans, and cheese...not necessarily all together.
So yeah, questions about my eating habits make for my typical Thanksgiving...and this one was no different, but there were was another veg head representing, which made it a little easier. I did have a lot of fun, even got to see a little snow and learned that frying a turkey is the healthiest way to cook it! Really???
And even though I had sh*t tons of mac and cheese leftover, I thought it was the best thing I have ever eaten on any Thanksgiving I can remember...maybe I am ok at following directions...

Mm...I love making Paula's mac & cheese- it is so yummers and it's not to hard to make. Good job Betty Croker!!
